We made this pesto tortellini appetizer last weekend for the football tailgate. It was really yummy and so easy! && the options to customize it are endless.
The beauty of these is that they are filling AND easy to eat in a social setting! The pasta is substantial but it can still be eaten in one bite. Perfect for passing on trays or grabbing when you have one hand occupied with a drink.
ps, I would have had these on a prettier tray but this was what went in our travel container and I snapped the picture right as we headed out the door. Forgive me, haha!
INGREDIENTS
cheese tortellini
pesto
marinated sun-dried tomatoes
pepperoni
toothpicks
DIRECTIONS
cook tortellini according to package
cool, rinse with cold water and let dry
add to bowl and coat with pesto (eye ball the amount)
put one tortellini and a folded up sun-dried tomato or pepperoni (we used used 2) on each toothpick
refrigerate
OPTIONS
cheese tortellini, cherry tomato, drizzle with balsamic glaze
cheese tortellini, green olive, greek dressing
spinach tortellini, mozzarella pearl, balsamic glaze
cheese tortellini, salami, Italian salad dressing
