Friday! Friday! Friday!  It’s been a hot minute since one of these posts hit the blog so I figured today would be a great time to hop back in.

EASY APPETIZER

We made some Texas Caviar last night and it made me think that it might be a good one to share with you all since the holidays are quickly approaching.  It’s SO beyond easy and goes over well at a party!  You can mix it up the night before (it fits perfectly in an 8 cup pyrex mixing bowl with lid) and serve with chips.  We also like to use the extras to mix into taco bowls for a week night dinner.

Combine the following in large bowl & serve.

1 can black-eyed peas, drained
1 can black beans, drained
I can white corn, drained
1 can petite diced tomatoes, drained
2 fresh medium jalapenos, stemmed, seeded and minced [I left this out]
1 small onion, diced small
1 yellow pepper, stemmed, seeded and diced small
1 red pepper, stemmed, seeded and diced small
1/4 cup chopped fresh cilantro
6 tablespoons red wine vinaigrette dressing
6 tablespoons olive oil (not extra virgin)
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1 1/2 teaspoons ground cumin
1/2 fresh lime squeezed

NEW SWEATERS

The temps have been pretty mild here..actually even warm for November!  That being said, I haven’t needed a coat just yet so I have just been ordering oodles of sweaters.  Nothing better than a good sweater & jeans, right?!  Here are the ones that I have on the way.

I hope you all have somefun weekend plans!  We’re headed to Cincinnatti this evening to celebrate a birthday and I’m hoping Ethan agrees to putting up the Christmas tree later  this weekend.  😉
